What 'denatured' really means

Why enzymes stop working when they get too hot, in 30 seconds.

Transcript

A student wrote this in their exam: "At high temperatures the enzyme is killed." So what does denatured actually mean?

An enzyme is a protein with an active site. The substrate is complementary to it, so it fits.

The substrate is broken down. The enzyme is not used up.

Now heat it above its optimum. The active site changes shape. Nothing fits any more. The enzyme is denatured.

Enzymes aren't alive, so they can't be killed. At high temperatures the enzyme is denatured.
